Charred Cabbage fill with Spicy Kebab

The humble cabbage may not seem like a superfood in the classic sense. But this everyday vegetable is packed with vitamins C and K, and helps decrease the risk of obesity and diabetes. Despite its health benefits, cooking cabbage can be boring so here’s something you can do to make it so it’s not boring, and give it a Mediterranean twist.  

Kebab is a popular ground meat dish that’s typically grilled/skewered over a fire. Thankfully, ArleneⓇ created a mouthwatering plant-based kebab that is on par with any meat versions offered in most Arab restaurants. It’s available in classic, spicy and pistachio flavors.

Ingredients:

Kebab

Chickpea puree

  • 400gm chickpea
  • 500gm vegetable stock
  • Salt and pepper to taste

Smoked paprika sauce

  • 100gm smoked paprika
  • 50gm fresh tomato
  • 1 pc onion
  • 20gm coriander
  • 100gm vegetable stock

Method :

Kebab  

Heat up frying pan and sear kebab for 3min on each side, until it turns into a nice golden brown colour. Once done, dry it on a kitchen towel. Once rested, diced the kebab into cubes.    

Chicken pea puree  

Using vegetable stock, boil chickpeas for around 5 minutes in liquid.  Blend the chickpea in a high-speed blender until smooth. Sprinkle with salt and pepper to taste.    

Smoke paprika sauce  

On low heat, cook garlic and onion until soft. When soft, add tomato, tomato paste, and smoked paprika and cook until dark red. Add vegetable stock and simmer for 10 minutes. Blend in a high-speed blender until smooth and season.    

Serving suggestion:

You'll want to serve your kebabs with the freshest pita bread possible. If you’re inviting friends over, consider setting up bowls with different condiments so your guests can build their own kebabs. Be sure to make enough of each accompanying sauce!
